This was a surprisingly colorful birch tree that grows nearby. I tap birches in spring as soon as the ground thaws. Birch water is the Latvian version of a super healthy vitamin packed detox drink that is the harbinger of spring.

You drink as much as you can while the sap is running; however, I could not keep up with my birch, so I froze a few bottles of sap for thawing and sipping during the hot summer days. There are those that make tasty champagne out of birch sap, but I'm not there yet.
